Moroccan cooking begins long before the stove — with the ras el hanout blend a spice seller mixes to order, the argan oil pressed by hand, the specific cut of lamb chosen for a tagine. We start every food experience in the souk itself, walking the spice stalls, produce sellers, and butchers with a local cook who explains what to look for and why, before carrying the ingredients back to a real family kitchen.

From there, it is hands-on: building a tagine layer by layer, learning the technique behind a proper couscous steam, shaping msemen or rghaif on a hot griddle, and understanding the logic behind spice combinations that Moroccan cooks carry in memory rather than measured recipes. You leave with skills you can actually repeat at home, plus the meal itself, eaten together at the end.
