We start every food experience in the souk itself, walking the spice stalls, produce sellers, and butchers with a local cook who explains what to look for and why, before carrying the ingredients back to a real family kitchen.
From there, it is hands-on: building a tagine layer by layer, learning the technique behind a proper couscous steam, shaping msemen or rghaif on a hot griddle, and understanding the logic behind spice combinations that Moroccan cooks carry in memory rather than measured recipes.
